As the birthplace of coffee, Ethiopia offers a tasting experience unlike any other, and the "Natural" (dry-processed) method is its most vibrant expression. In this traditional process, the coffee cherries are sun-dried whole on raised beds, allowing the beans to absorb the concentrated sugars and juices of the fruit. The result is a cup that is famously "jammy" and "wine-like," bursting with intense notes of ripe blueberry, strawberry, and tropical stone fruit. This fruit-forward sweetness is elegantly balanced by the delicate, tea-like floral aromas of jasmine and hibiscus that are the hallmark of Ethiopian heirloom varieties
